My mom wasn’t into cooking but she had a handful of “can’t miss” recipes that everyone in the family loved. This recipe is one of them. You can either make a single loaf or muffins. Delicious in either form.
I call this recipe “old fashion” banana bread because it’s full of butter, sugar, and flour. Ingredients that have a bad rap these days. But if you’re in the mood for old school baking, this recipe will satisfy.
Ingredients
1/2 cup butter (1 stick)
1 cup sugar
2 eggs
1 1/2 cups mashed bananas (about 4 medium)
1 1/2 tsp baking soda
1/4 tsp salt
2 cups flour
Instructions
Preheat oven to 350-degrees (F)
- Mash bananas. Set aside.
- Cream butter and sugar.
- Add eggs.
- Add mashed bananas.
- Add flour, baking soda, and salt.
Bake in a greased loaf pan 50 to 60-minutes at 350-degrees.
You can also make banana muffins. Recipe makes about 18 standard-size muffins. Reduce baking time to 25-minutes.
